Clean Your Fridge Pasta

 



GET YOUR FRIDGE CLEAN 

It's time to clean your fridge and restock it! So for this purpose, there is no better dish to make than a pasta dish! For mine, the ingredients got a bit too fancy because in Montenegro prosciutto is not really a fancy food and is quite accessible and affordable. So for this recipe, we will be using common household ingredients and we will 100% be getting freestyle creative. 

I will write out a common recipe for two different pasta sauce bases, and as for the other odd ingredients you would like me to make a base for, feel free to comment or reach out in any way! 

So our pasta sauces today are going to be ONION CREAM and TOMATO GARLIC. These will be the base for the rest of the cleaning of the fridge, and your obligation will then be to match flavors. The matching should not be based on a perfect cooking pairing but solely on your taste buds, this is the first step to learning how to trust yourself in the kitchen. 

I assume you own some spices, if you don't add these to your shopping list! Let's start. 

ONION AND CREAM BASE

Cut all the onions you own (unless you own more than three, then stop at three). You cut them in half first then you cut them sideways, like in strips. (chop chop) 

You let them cook on high heat for 3 minutes max, and then turn down the heat to medium, and add two smool spoons of VEGETA. (basically dried vegetable spice with MSG) 

You let them sweat a bit like that, let's say it takes around 15 minutes, and then you pour some white wine or water will do as well (wine is better), this is deglazing the pan. After your onions have changed color towards a more brown note, you will here add your matching ingredients and then once those cook a bit you can add your cream(if you don't have cream, milk can be used as well, with a teeny tiny spoon of flour). 

TOMATO AND GARLIC BASE

Cut up your tomatoes if you have them and let them cook in a deeper pan. In case you do not have tomatoes then you can reach for a tomato paste or canned one. Once the tomatoes are cooked through you can add the appropriate amount of chopped garlic into the mix and also add the corresponding ingredients.  Add also two smool spoons of VEGETA.

You can also use three tomatoes for this base and it should be a nice and rich serving. 


How to figure out what combinations feel good? 

Teste test everything you cook, always. Have a little spoon prepped at all times, and figure out your palate slowly. This type of cooking will eventually ensure that the people who eat your food feel the love you poured into it. The best advice for cooking is to try your best to make it a fun hobby activity. It's time to trust ourselves with food, even if you have issues with this, slow, baby steps will make you feel accomplished and in tune with yourself.

Clean Your Heart Entry 



I postponed the writing of this entry for what seems like a lifetime now. Maybe because the cluttered emotions felt more comfortable than the hauntingly empty space I knew was going to happen after the cleaning. 

In the endless game of trying to be okay in a burning world, I put out fires constantly within myself, which left me with an obscene amount of ash everywhere I went. So that was the first step. As I cleaned the ashes of lovers passed and friendships burnt to a crisp, I realized how fragile I actually am in comparison to how aggressively put together I present myself. In that realization, my edges softened and my heart was lifted. There is actually no need to be ashamed of the fragility of my soul because in it I have reinvented and reshaped myself so many times, that I became a glass mozaic composed or breakage. 
I am not as strong as I was, or maybe I find no use in the word anymore. It describes nothing in the real world, and now it feels like a made-up adjective, at least when it comes to people's inner worlds, whether you crumble in pain, or you remain standing, to my heart you carry the same value and will be given the same grace. The turn is mine to feel the same towards me, but by the nature of my birth and childhood, I cannot seem to fully let go of my own expectations to be strong. 

There will be no more words in this entry, mostly, because I do not have any to share. It is only here to remind you that sometimes cleaning the vast space within can be healing and one of the kindest things you can do for yourself. Good luck, and thank you for reading my diary.
